Industrial Visit Report  (Mother Dairy)

Introduction:

On 28 /Feb./2023, I had the opportunity to visit the Mother Dairy plant located in Patparganj, Delhi. The purpose of the visit was to gain practical knowledge of the dairy industry and understand the process of milk production, packaging, and distribution. The visit was organized by our college as a part of our industrial visit program. The trip was very informative and helped us understand the importance of the dairy industry in India.

 

Plant Overview:

Mother Dairy was established in 1974 as a wholly-owned subsidiary of the National Dairy Development Board (NDDB). The company was established to promote dairy development in India and to provide a stable market for the dairy farmers in the country.

Following the success of operation Flood, Mother Dairy has now evolved to become a national player. Starting from a robust network of booths and retail channels in Delhi, the company has expanded its reach to a national scale.

Mother Dairy has formed several partnerships over the years to strengthen its operations and product offerings. In 1996, the company formed a joint venture with Danone, a French dairy company, to produce and market dairy products in India. However, the partnership was terminated in 2018 due to strategic differences.

Mother Dairy is a well-known dairy company in India that has been serving the nation for the past 45 years. The Patparganj plant is one of the largest and most advanced facilities of Mother Dairy. The plant has a capacity of processing 2.5 million litres of milk per day, and it covers an area of over 25 acres. The plant produces a wide range of products, including milk, curd, butter, cheese, ice cream, and more.

The Mother Dairy plant at Patparganj is located in a strategically important location in Delhi, which makes it easier to transport the milk and milk products to different parts of the city. The plant is equipped with the latest machinery and equipment to ensure that the milk is processed efficiently and hygienically.

Today, Mother Dairy is a leading dairy company in India, with a presence in over 100 cities across the country. The company has a network of over 1,400 milk booths and retail outlets, and it processes over 3 million liters of milk per day.

 

 

Production Process:

 

1.Milk Collection:

The milk production process at Mother Dairy starts with the collection of raw milk from the farmers. The company sources milk from over 700,000 farmers across the country. The milk is transported to the plant in specially designed tankers that maintain the temperature of the milk.

 

2.Milk Testing:

The milk is tested for quality and composition at various stages of the production process. The quality tests are conducted to ensure that the milk is of high quality and is safe for consumption. The company has a strict quality control process, and only milk that meets the quality standards is processed further.

 

The milk is tested for its fat percentage, protein percentage, and bacterial count. The quality control department is responsible for ensuring that the milk and milk products are safe for consumption. The department conducts tests on the raw milk, pasteurized milk, and final products to ensure that they meet the quality standards set by the company and the government.

 

3.Milk Storage:

After the milk is tested, it is stored in large tanks, where it is pasteurized to kill any harmful bacteria and then homogenized to ensure uniformity. The milk is then packed into pouches and bottles of various sizes.

 

4.Pasteurization:

Pasteurization is the process of heating the milk to a specific temperature to kill any harmful bacteria present in the milk. The milk is heated to a temperature of 72°C for 15 seconds. This process helps in extending the shelf life of the milk.

 

5.Homogenization:

Homogenization is the process of breaking down the fat particles present in the milk to ensure uniformity. The milk is passed through a homogenizer, which breaks down the fat particles into smaller particles. This helps in preventing the cream layer from forming on the top of the milk.

 

6.Packaging:

After the milk is pasteurized and homogenized, it is packed into pouches and bottles of various sizes. The packaging area is equipped with modern machines that pack the milk and other products with high accuracy and speed. The packed products are then sent to the distribution center, from where they are distributed to the retail stores and other outlets.

 

7.Quality Control:

The quality control department is responsible for ensuring that the milk and milk products are safe for consumption. The department conducts tests on the raw milk, pasteurized milk, and final products to ensure that they meet the quality standards set by the company and the government.

 

Quality Control Process:

Packaging Process:

After pasteurization, the milk is homogenized to ensure that the cream is evenly distributed throughout the milk. Homogenization is the process of breaking down the fat molecules into small particles and mixing them with the milk.

 

3.Filling and Sealing:

The milk is filled into the packaging material and then sealed. The packaging material used is of high quality and is designed to ensure the milk's freshness and purity.

 

4.Quality Check:

After filling and sealing, the packaged milk is checked for quality to ensure that it meets the standards set by the company and the government. The milk is checked for its fat percentage, protein percentage, and bacterial count.

 

5.Coding and Labeling:

After the quality check, the packaged milk is coded and labeled. The code and label contain important information about the milk, such as the batch number, date of production, and expiry date. The label also contains nutritional information and the brand's logo.

 

Distribution Process:

 

1.Warehousing:

The packaged milk is stored in the warehouse before it is transported to the retailers. The warehouse is equipped with modern temperature-controlled systems to ensure that the milk is stored at the right temperature to maintain its freshness.

 

2.Transport:

The milk is transported from the warehouse to the retailers in refrigerated trucks. The refrigerated trucks are designed to maintain the milk's temperature to ensure that it reaches the retailers in the same condition as it left the warehouse.

 

3.Retailing:

The packaged milk is then sold to the consumers through retail outlets, including supermarkets, grocery stores, and milk booths. The retailers are trained to handle the milk carefully and ensure that it is stored at the right temperature to maintain its freshness.

Conclusion:

Overall, the visit was an excellent learning experience for us. We got to see the entire process of milk production, from the collection of raw milk to the distribution of the final product. We also got to learn about the quality control measures and the importance of maintaining hygiene and cleanliness in the production area. We are thankful to the staff at Mother Dairy for providing us with this opportunity to learn and gain practical knowledge of the dairy industry.
